Perfect Key Lime Pie Recipe

There are some recipes that are just so much fun to make and this is one of those for me! I LOVE making Key Lime Pie! I am honestly not a big lemon or lime person when it comes to desserts, but there’s something about the flavors and the refreshing ingredients of it all that makes me so happy.

My brother-in-law, Matt, recently got surgery on his back after a really hard year filled with pain and countless doctor’s appointments. He had mentioned a few months ago that he really loves key lime pie, so I thought this could be a perfect way to perk him up a little bit and put a smile on his face!

Jesse, the boys and I took some delicious vietnamese food over and then indulged! Weird combination, I know, but it was oddly satisfying!

Matt is a self-proclaimed Key Lime Pie connoisseur, so when his exact words were, “Lindsey, this pie is seriously insane. I’m impressed.” after he finished scraping his plate clean, I knew that after trying a ton of different varieties, I had finally found the perfect Key Lime Pie recipe!


As the weather begins to change, I’m so excited that I had the opportunity to make this tangy, tart and perfectly sweet summer dessert at least once. I’m sure I will probably squeeze a couple more in for friends and family before Fall actually hits – and I’ll sneak a slice or to for myself, of course. 😉

Perfect Key Lime Pie

Ingredients
  • 1 1/2 Cups Finely Ground Honey Graham Crackers
  • 6 Tbsp. Butter (Melted)
  • 1/3 Cup Sugar
  • 3 Cups Sweetened Condensed Milk
  • 1/2 Cup Sour Cream
  • 3/4 Cup Key Lime Juice (About 20 Key Limes)
  • 3 tsp. Lime Zest
Instructions
  1. Preheat oven to 350 degrees.

  2. Mix graham cracker crumbs, sugar and melted butter until well blended. Press mixture into an 8 or 9 inch pie plate. Set aside.

  3. In a medium bowl, combine condensed milk, sour cream and lime juice. Mix well and pour into graham cracker crust.

  4. Bake in preheated oven for 6 to 9 minutes, until tiny pinhole bubbles burst on the surface of pie. Make sure not to brown the pie by cooking for too long! 

  5. Add grated lime zest on top of pie. Chill thoroughly (about 45 minutes) before serving. 

  6. Garnish with whipped cream and lime slices. Enjoy!
