These Soft & Chewy White Chocolate, Cranberry & Pistachio Cookies are the perfect treat for Christmas and the holiday season! My sweet two-year-old calls them ‘The Grinch’ cookies and I couldn’t love that more!
Ever since Jesse and I got married, we have had a special place in our hearts for loving on people who are going through hard times.
Whether it’s dropping off groceries anonymously at a door for a struggling family or baking treats for a friend who needs a little pick-me-up; it has always blessed us immensely. Probably more than the people we were gifting.
The holiday season can be one of most joyful seasons for many, but they can also be incredibly difficult and heartbreaking for some. I feel strongly that it’s important to display acts of love throughout the entirety of the year, but the holidays seem to hold a special place for acts of kindness and pay-it-forward moments.
I decided to bake these festive red, white and green cookies for a dear friend who is going through a very challenging season of life. She is a foster mother – a woman who gives and gives of herself and loves on every child who comes into her home.
This friend has had a sweet baby in her home since she was a newborn and they were praying for the opportunity to adopt her because she quickly became their baby and the original family environment wasn’t close to ideal.
However, she was recently told that she had to give her sweet baby back to one of the family members and, as you can imagine, they are heartbroken. As I have walked alongside other friends who have fostered with the goal of adopting, I have witnessed firsthand how much of an emotional rollercoaster it can be to do so.
I so admire any family who chooses to foster and adopt. As Christians, we are called to take care of orphans and I truly believe that it takes immense strength and reliance on God to follow through with that command.
To any family going through the hardships and joys of fostering or adopting, please know that what you are doing is incredible, beautiful and God sees every tear and hears your prayers for these sweet babies.
Our hearts are always filled when we have the chance to do a little something – simply praying and baking sweet treats for friends – when all other circumstances are out of our control.

And you guys, these cookies!
They are so, so good! My cousin made a version of them for us last Christmas and I ate every single one (oops!) The red, white and green is perfectly festive and the flavor is deliciously unique.
These White Chocolate, Cranberry and Pistachio cookies are incredibly soft and chewy. If you’re looking for cookies to make for strangers, loved ones or for a Cookie Exchange, you won’t regret baking these!
Not only are these green, white + red cookies beautiful and festive for the holidays, they are also perfectly delicious! They're just sweet enough and offer a great texture combination of a gooey cookie, crunchy pistachio and soft cranberry.
- 1 1 lb. 1.5 oz pouch Sugar Cookie Mix
- 1 3.4 oz box Pistachio Instant Pudding and Pie Filling Mix
- 1/4 Cup Bob's Red Mill Organic Flour
- 2 Eggs
- 1/2 Cup Melted Butter
- 1 Cup Dry, Roasted Pistachio Nuts (chopped)
- 1/2 Cup White Chocolate Chips
- 1/2 Cup Dried Cranberries (chopped)

Preheat oven to 350 degrees F.

In a large bowl, add cookie mix, pudding mix (unprepared) and Bob's Red Mill flour and mix well.

Add melted butter and eggs into mixture and mix until well-incorporated.

Add pistachios, white chocolate chips and cranberries. Fold together with rubber spatula.

Drop by rounded spoonfuls onto a greased, parchment-lined cookie sheet and use spoon to flatten cookies slightly.

Bake for 7-10 minutes, checking them regularly. Be sure not to overbake! If they are cooked too long, they will harden quickly and won't be as green.

Allow to cool and place in airtight container for storage (if they last that long!)
