I have always wanted to try to make Paella, but for whatever reason, I was so intimidated by the process!

It may be because I’m the worst at cooking rice and I always seem to burn it (haha) but this Spanish Chorizo and Shrimp Paella recipe was actually so incredibly easy and got rid of all of the fear!

You guys may already know that we have been cooking ‘Around the World’ as a family and I share our experiences on my Instagram Stories.

My husband and I were recently watching The Final Table on Netflix where some of the biggest chefs in the world cook cuisine from a variety of countries. It was the best cooking show I had seen in a long time! For one of the competitions, they challenged them to make paella and I immediately did a grocery order for all things paella.

However, life happened, and I never got around to making it! But I have had the opportunity to work with HelloFresh each month and one of the menu options was a Chorizo and Shrimp Paella with Garlic Aioli – so you know I had to try it! 

This recipe is full of SO much flavor and it’s one of those meals that will make your guests think you’ve been slaving over the stove all day – but it only took 30 minutes.

Jesse and I ended up eating the Shrimp Paella out of the pan (we honestly didn’t even make it to the table!) I ended up taking the peas out of my portion because I’m not a huge pea fan, but Jesse thought it added great flavor and texture.

The creamy Garlic Aioli was drizzled on top of the Spanish Chorizo and Shrimp Paella and created the perfect accompaniment to the dish.

Spanish Chorizo and Shrimp Paella with Garlic Aioli

Spain's most famous dish has never been easier to make - or more delicious! This meal is full of flavor and will have your guests begging for the recipe

Ingredients
  • 2 Bellpeppers
  • 6 Oz. Dried Chorizo
  • 1 Clove Garlic
  • 1 1/2 Cup Arborio Rice
  • 2 tsp. Smoked Paprika
  • 1 tsp. Turmeric
  • 6 Cups Water
  • 1/4 Cup Seafood or Chicken Stock
  • 20 Oz. Shrimp
  • 2 tsp. Garlic Salt
  • 8 Oz. Peas
  • 4 Tbsp. Mayonnaise
Instructions
  1. Halve, core and thinly slice bellpepper into strips. Thinly slice chorizo into rounds. Peel and mince garlic.

  2. Heat a drizzle of olive oil in a large pan over medium-high heat. Add bell pepper and chorizo. Cook, stirring occasionally, until bellpepper is slightly softened and chorizo is lightly browned (2-3 minutes).

  3. Stir rice, half the garlic, 1 tsp of the paprika, 1/2 tsp. of the turmeric, into a pan and cook until fragrant (about 30-60 seconds.)

  4. Stir in 6 cups of water, stock concentrate and salt. Bring to a boil.

  5. Cook, stirring occasionally, until liquid has evaporated and rice is tender, 15-20 minutes.

  6. While rice cooks, in a small bowl combine the mayonnaise with remaining garlic (to taste.) Stir in water 1 tsp. at a time until mixture reaches a drizzling consistency. Season with salt and pepper.

  7. Rinse shrimp under cold water, then pat dry with paper towels. Season all over with remaining paprika, salt and pepper.

  8. When rice is almost done (the majority of the liquid should be cooked out), heat a large drizzle of olive oil in a second large pan over high heat.

  9. Once the pan is hot, add shrimp and cook, stirring occasionally, until opaque and cooked through at 145 degrees (about 3-4 minutes.) Add garlic salt and turn off heat.

  10. Once rice is done, turn off heat and stir in peas. Taste and season with salt and pepper. Top with shrimp and drizzle with garlic aioli. Serve directly from the pan for a family-style, traditional paella experience. Enjoy!
