One way that we have been fighting to create normalcy in our home is to continue with our family meals around the dinner table. You all know how important that is to me!

My favorite part of the slowness is that we have done a lot of things that we never did before (at least with consistency).

For the past few months, we have been cooking together A LOT more than we ever have. The boys (ages 2 and 5) have been more involved in the processes of getting items out of the fridge, stirring and serving.

I recently got my husband a new top-of-the-line RecTec Grill for Father’s Day. Needless to say, he has been addicted to smoking and grilling everything he can since day one!

Cooking simple and delicious meals is a great activity that helps to create a strong bond between family members. Some of the sweetest memories I have are the ones around the stove with my mom and sister.

This BBQ Pork Burger was my favorite recipe we’ve made by far so I had to share it! The sweetness of the bun and the onions, the spice from the creamy aioli and the bbq ground pork has the perfect amount of tang. 

I used the potatoes to make some of my favorite roasted potato recipe. My husband and both boys gave two thumbs up to this BBQ Pork Burger meal!

BBQ Pork Burgers with Chipotle Aioli

A juicy pork burger pairs perfectly with a sweet bun, spicy chipotle and tangy sauteed mushrooms. This is one of my ALL-TIME favorite burger recipes!

Ingredients
  • 2 Yellow Onions
  • 8 Tbsp. Barbecue Sauce
  • 1 Tbsp. Fry Seasoning
  • 20 Oz. Ground Pork
  • 1/2 Cup Monterey Jack Cheese
  • 4 Potato Buns
Instructions
  1. In a small bowl, combine mayonnaise and chipotle powder to taste (start with a pinch of the powder, then taste and add more from there if desired.) Season with salt and pepper. Set aside in the fridge.

For the Onions:
  1. Halve, peel and thinly slice onion. Mince a few slices until you have about 2 Tbsp

  2. Melt 1 Tbsp. Butter in a large pan over medium heat. Add sliced onion and season with salt. Cook, sitrring occasionally, until softened and lightly browned, 10-15 minutes.

  3. Stir in HALF the BBQ sauce (save the rest for serving); cook until sauce is warmed through, 1-2 minutes. Turn off heat: transfer to a medium bowl. Wash out pan.

  4. In a large bowl, combine pork, minced onion, Fry Seasoning, 1/2 tsp. Kosher Salt, and pepper. Form into two patties, each slightly wider than the burger bun.

  5. Heat a drizzle of oil in pan used for onion over medium-high heat. Add patties and cook until browned and cooked through. 4-7 minutes per side.

  6. In the last 1-2 minutes of cooking, top each patty with Monterey Jack: cover pan until cheese melts. Remove from pan and set aside.

  7. While patties cook, toast buns until golden.

  8. Spread bottom buns with remaining BBQ Sauce. Spread top buns with chipotle aioli. Fill buns with patties and caramelized onion. Divide burgers between plates and serve with fries or tator tots on the side.
